        <p>Ферментация является одним из наиболее широко используемых методов консервирования пищевых продуктов и разработки натуральных продуктов с функциональными свойствами. Ферментированные продукты и напитки привлекательны для потребителей, предпочитающих здоровый образ жизни, поскольку они воспринимаются как естественные и потенциальные источники функциональных соединений. Цель статьи – обзор научных исследований о применении новых технологий в качестве процесса вспомогательной ферментации для разработки ферментированных напитков. Научно-технические достижения в области пищевых исследований сыграли решающую роль в эволюции ферментации: от использования и выбора конкретных заквасок до улучшения их характеристик за счет применения новых технологий, получения продуктов с высокими органолептическими показателями и пищевой ценностью. Было установлено, что омический нагрев, высокое гидростатическое давление, ультразвук и импульсное электрическое поле обладают потенциалом в качестве процессов вспомогательной ферментации, способных ускорять микробный метаболизм, улучшать жизнеспособность клеток, сокращать время обработки, увеличивать срок годности продукта и улучшить функциональные и питательные характеристики напитка. Вместе с тем необходимо вести дальнейшие исследования механизмов действия каждой технологии, влияющей на процесс ферментации различных видов пищевого сырья с целью выбора оптимальных параметров обработки, снижения энергопотребления и вредного воздействия на окружающую среду с сохранением пищевой ценности сброженных напитков.</p>

      <abstract xml:lang="en" lang-variant="translation" lang-source="translator">
        <p>Fermentation is one of the most widely used methods for food preservation and development of natural products with functional properties. Fermented foods and beverages are attractive to health-conscious consumers because they are perceived as natural and potential sources of functional compounds. The purpose of the article is to review scientific research on the application of new technologies as an assisted fermentation process for the development of fermented beverages. Scientific and technological advances in food research have played a decisive role in the evolution of fermentation: from the use and selection of specific starter cultures to improving their characteristics through the use of new technologies, producing products with high sensory characteristics and nutritional value. Ohmic heating, high hydrostatic pressure, ultrasound and pulsed electric field have been found to have potential as assisted fermentation processes that can accelerate microbial metabolism, improve cell viability, reduce processing time, increase product shelf life and improve the functional and nutritional characteristics of the beverage. At the same time, it is necessary to conduct further research into the mechanisms of action of each technology that affects the fermentation process of various types of food raw materials in order to select optimal processing parameters, reduce energy consumption and harmful effects on the environment while maintaining the nutritional value of fermented drinks.</p>
